CARROT CURRY MADE EASY


Ingredients

Carrot - 4
Salt to taste
Moong dal - 2 tsp

channa dal  - 1/2 tsp
green chillies - 1 or 2
curry leaves - 1 sprig
grated coconut - as desired
mustard & urad dal for seasoning
turmeric powder - a little
sugar ( optional )
oil

Method

Grate carrots.

soak moong dal and channa dal for 5 -10 minutes.

Heat a kadai. Add some oil. Add mustard seeds and
urad dal. When urad dal becomes golden brown add
curry leaves, grated carrot. Drain water from soaked dal
and add the dal mix.
Add salt and turmeric powder. Mix well together.

No water to be added.

Close it with a lid and cook on very low fire. Stir it occassionaly till done. It will take 5 to 6 minutes.
Add grated coconut and sugar ( if needed ).
Mix well and remove from fire.

THIRATTU PAAL IN MICROWAVE ( JUST IN SIX MINUTES )

Ingredients

Condensed Sweetened Milk = 500 ml. ( Milkmaid 1 tin )
Milk - 1 Tablespoon
Curd - 1Teaspoon

Method

Add condensed milk, milk and curd in a microwave vessel and mix well. ( Dont add water).

Keep the mixture in micro high for 2 mins. Remove and stir well. Repeat twice for every next one minute.  The mixutre would have thickened in 4,5 minutes. Stir thoroughly and microwave for one more minute.

Remove and let it cool.

BADAM KHEER

Ingredients

Almonds - 15 to 20
Cashewnuts - 10
Carrot - 1 medium size
Sugar - 1/2 cup
Milk - 1/2 litre
Saffron, Cardamom powder
colour - optional

Method

Soak almonds in water and peal. Soak cashews too.
Pressure cook carrot and grind together with peeled almonds and cashew to fine paste.

Boil milk. Add paste. When it starts boiling add sugar.
Boil for 5 minutes. ( keep stirring in between )

Add saffron and yelaichi powder.

Serve hot or cold.
